How to Prepare Ifokore

I am not a cook or a caterer but I will tell you that this is one of the best foods in Nigeria that most people want to know about.

Though I am not a cook or a caterer (although my mother is a Caterer), but I can do some damages in preparing this meal. Ask my mother she will tell you better.

I could remember the last time we had this meal, I told my mother before she prepared it that I will be the one to prepare it but she didn’t allow me to prepare it and I felt defeated but I didn’t blame her because I knew that the main reason is was “MY FATHER” He usually us to as “Inexperience cookers”

Well, that is man for you and thanks to my mother who always do her best to make this meal a reality show for the entire family because the whole family is always happy whenever decision is made about this meal.

Without wasting your time, I will share with you how she cooks the meal for the family. So don’t think it is the inexperience cooker.

By the way, I am also a cooker – I can cook rice and some other foods – so don’t think
I am that inexperience.

Below are some Ingredients or Recipe for cooking Ifokore

Note that the recipe and the method in cooking might not correspond with some other people’s recipe and Methods

Ingredients

Yam
Red Palm-Oil

Smoke Fish
Pepper
Seasoning
Salt

Procedures

The first thing you have to do is to Peel the yam, cut it into small size and wash it with water.

Use Grater (A metal tools use for shredding food items into small pieces) to blend the yam or any other kitchen utensil that can blend it, and make sure you put a big bowl beneath the grater so that the blended yam will pour into the bowl.

Mix the blended Yam together with salt and set it aside

Pieces the smoke fish and extracts every unnecessary bone; pour the extracted fish on a clean plate

The second Step is to put a pot of enough water on the fire while still

on fire add the amount of pepper you think will be enough for you, also add seasoning and the extracted fish inside the pot that is on fire.

The third step is to use either your hand or a big spoon to mould the mix blended yam into a ball shape and add to the pot on fire.

Leave for about 8 minutes.

Add Red Palm oil to it, and leave for about 20minutes.

Then, you can now Serve.

Benefits of eating Fish

 I could remember one of the most amazing stories that my mother told me that always let me give thanks to God was when I was very sick.

 

She told me that when I was still a little kid, I felt very sick so after running from place to place seeking for how to skyrocket my health without any improvement, she decided to take me to the village.

I know what you are thinking “Why?” Your thought is absolutely accepted because I also think the same way “why should I be taken me to the village instead of Hospital” So I asked her why she took me to the Village. She didn’t hesitate, she just go straight to the point by saying “To eat FISH”

When I heard this I stood up and started Laughing, I didn’t believe her, I thought she was making fun of me. She kept contemplating on the FACT, but I refused to believe her, although I knew she was telling the truth because she never lied to me, but because my younger brother and sister were there when she was telling the story, so I decided to accept disgrace from my younger.

The following day one of my Uncle came around. So my mother decided to raise the Issue, so as to prove to me that she was not lying.

When she asked my uncle why she took me to the village when I was very sick? To my greatest disgrace in the presence of my younger ones, he said “To eat fish” he further said that I was among those that ate the entire fish in the river near our family house in the village. What a mess! But a great testimony!

She then continued by saying that after two weeks of eating Fish (regularly) I became very healthy and strong. It was a miracle.

Yes a miracle. In fact Fish is one of the creatures that God created for the purpose of man consumption.

Adding fish to your diet will not only help skyrocket your health but it will save you money

It Reduce the risk of Coronal Heart Disease thereby reducing mortality rate

Brain development in Infant because of high levels of omega 3 fatty acids that keeps the arteries free of blockage and lowers your blood pressure. Fish like salmon, Herring, mackerel, sardines and some others.

Fish contains low saturated fat: Unlike high fat found in meat that block blood from flowing into the arteries thereby causing high blood pressure, low saturated fat found in fish doesn’t block blood from flowing in the arteries.

Eating fish makes you diseases free: Most fish contains a lot of vitamins that protect the body from diseases, fish like salmon has 100% vitamins, which means you are 100% free from diseases

It is suggested that we should eat at least 2 serving plate of fish a week

It is good for maintaining a healthy metabolism: Fish contains complete protein sources with all the amino acids your body needs to maintain a healthy metabolism.

It is also studied that fish is very good for children because it helps develop their brain.

Alert: excessive consumption of fish might be leads to mercury poison that are found in most food as a result of water pollution and some other factors.

Fortunately, you can avoid this by giving your food life.

How to prepare Melon Seed Soup (Egusi Soup)

Melon Soups also known as Egusi Soup is one of the most popular soups in Nigeria; precisely Sagamu, Ijebus and some other part in Ogun State – Western Part of Nigeria.

One of the reasons why Melon Seed Soup or Egusi Soup is very good and important is that it is proven by scientist that Melon Seed is an ANTIOXIDANT. Cooking the soup is as easy as nothing else; all you have to do is get some ingredients and you are on the move.

Here come the Ingredients

INGREDIENTS:

  • Melon Seeds
  • Pepper
  • Onions
  • Red Palm Oil
  • Vegetable Leaves (Slice)
  • Salt (very very Important)
  • Seasoning – (optional)
  • Crayfish (Optional)
  • Stock Fish or Meat

 

 

PROCEDURE

 

The first step you need to take is to Peel away the Cover of the seed then wash the seeds with clean water.

After then grind the Melon seed with Grinding Stones that is the best way to grind it naturally or you can use Grinding Machine

Cook the stock fish or meat with onion till tender

Put a Pot of Red Oil in the fire and let it heat for some time and fry the melon with onions.

Make sure you stir it very well as you fry it to prevent it from getting burn. (No close one eyes)

Pour the stock fish and Meat and stir together.

Now the ball is in your court. In this stage you need to add or should I say pour some water.

Hmm wait a minute I know you are aiming for that Gallon of Water, please don’t over pour the water because if you do that, the soup might loss its taste. So you need to add water up to the quantity of soup you desire.

Add crayfish, pepper (make sure you don’t add too much of this, because if you do you won’t be the one to eat it), Seasoning (don’t over add this).

The Last but not the Least is to add your Slice Vegetable and add salt to it(moderate) to taste very nice.

The Last thing is to serve yourself.
